Ingredients: 3 red grapefruits, 2 ripe avocados (sliced 1/4 inch), 1/4 c. fresh mint (torn). 1/4 c. Cilantro (chopped up), 1/4 c. blanched hazelnuts (toasted & chopped coarsely), 3 TB. OLIVE ‘n VINNIE’S EVOO, 1 – TB minced shallot, 2- TB O & V GRAPEFRUIT balsamic, 1-tsp Dijon, 1-tsp sugar, 1/2 tsp salt:
Cut away peel and pith from grapefruit. Slice between membranes to release segments. Reserve 2 TBS juice. Arrange avocado slices in single layer on platter. Distribute grapefruit evenly over the top of avocados. Sprinkle mint, cilantro and hazelnuts over top.
Meanwhile, whisk together oil, salt, balsamic, sugar, shallots, mustard and reserved grapefruit juice in bowl and then drizzle dressing over contents on the platter. Serve immediately. Elegant and easy.
