Key limes are more aromatic and stronger than the Persian Lime (we offer that in an olive oil). They start out green, but left alone, will turn yellow and fall off the tree which in turn enhances their flavor.  This lively, sweet balsamic is delicious on a Caribbean inspired salad paired with the Persian Lime olive oil or the coconut balsamic.  It is quite sweet, kind of tastes like a lime popsicle.  It is fun over berries, in cocktails or refreshing in sparkling waters. Pairs well with an extra virgin olive oil or our Milanese Gremolata.  Drizzle over a coconut or lemon pound cake….oh yeah!
