Coconut Balsamic Pina Colada Mocktail

Ingredients

  • 1 cup pineapple juice
  • 1/2 cup coconut cream
  • 2 tbsp Coconut White Balsamic
  • 1 cup ice
  • Splash of sparkling water (optional)
  • Toasted coconut flakes, for the rim (optional)
  • Pineapple wedge and cherry, for garnish

Instructions

  1. If using, wet the rim of two glasses with a little coconut cream and dip in toasted coconut flakes.
  2. Blend the pineapple juice, coconut cream, Coconut White Balsamic, and ice until smooth.
  3. Pour into the prepared glasses.
  4. Top with a splash of sparkling water if you want it a little lighter.
  5. Garnish with a pineapple wedge and cherry, and serve immediately.
Make-ahead tip: Blend the pineapple juice, coconut cream, and balsamic together and keep chilled up to a day ahead. Add ice and blend again right before serving so it stays thick and frosty.

Make It Your Own

Add a handful of frozen mango or pineapple chunks in place of some of the ice for an even thicker, more frozen texture. For an adults-only version, a splash of white rum or coconut rum blends right in without changing anything else about the recipe.
