Infused vs. Fused — What's the Difference?
You'll notice we use two terms: infused and fused. They might sound similar, but the process — and the result — is quite different. Both start with the same great extra virgin base, but how the flavor gets in there is what sets them apart.
After the Press
Infused oils start with finished extra virgin olive oil. Natural plant ingredients — herbs, garlic, basil, truffles, and more — are introduced to the oil after pressing. The oil slowly draws out the flavor, aroma, and character of the ingredient over time.
The result is a smooth, layered oil with a bright, distinct flavor that sits beautifully on top of the olive oil's natural fruitiness.
At the Crush
Fused oils — also called agrumato — are made by crushing whole fruits, citrus, or chilies together with the olives at the exact moment of pressing. The oils from both the olive and the ingredient are extracted simultaneously and become completely integrated.
The result is a deeper, more complex flavor that is baked into the oil itself — not sitting on top of it. Bold, seamless, and intensely aromatic.
It All Starts With Great Olive Oil
A flavored oil is only as good as the oil it starts with. That's why every infused and fused oil we carry uses the same ultra-premium cold-pressed extra virgin olive oil as its base — the same standard we hold all our EVOOs to.
We rotate our selection every six months, following the freshest harvest from whichever hemisphere is in season. That means the base oil in your bottle of Garlic or Blood Orange was crushed within hours of harvest, from the freshest olives available at that time of year.
No refined oils. No fillers. No shortcuts. Just great olive oil with great flavor added the right way.

How to Use Flavored Oils
The beauty of flavored olive oils is that they do the heavy lifting for you. One good bottle can turn a simple meal into something memorable — here are the most popular ways our customers use them.
Bread Dipping
Pour into a shallow dish, crack some black pepper over it, and let a good loaf do the rest. The easiest appetizer you'll ever make.
Salad Dressings
Whisk 2 parts flavored oil with 1 part balsamic vinegar, a pinch of salt, and a dab of Dijon for an instant homemade dressing.
Finishing Pasta
Drizzle over cooked pasta right before serving. Garlic, Basil, or Tuscan Herb elevate a simple bowl into something special.
Marinades

Because we follow the freshest harvest, our flavored oil lineup rotates every six months as we switch hemispheres. Your favorite might occasionally be replaced with something equally delicious from the new harvest. Not sure what to try when something is out?
