The Basics

Same Grape. Different Story.

White balsamic starts exactly where dark balsamic does — with the Trebbiano grape from Modena, Italy, the same ancient variety that has been the foundation of Italian balsamic for centuries. But what happens next is where the two part ways.

While dark balsamic is slow-cooked over an open flame until it caramelizes deeply and takes on that rich, dark color, white balsamic is cooked at a lower temperature — just enough to develop sweetness, but stopping well before caramelization. It's then aged in stainless steel or light wooden barrels, which keeps its color pale and its flavor clean and bright.

The result is a vinegar with a genuinely delightful, crisp character — naturally sweet and pleasantly tangy, without the intensity of the dark. It's the one you reach for when you want all the flavor without changing the color of your dish.
