Two of our most tropical balsamics, working two different jobs on the same plate, is basically dessert in its simplest, most delicious form.

Fresh pineapple gets brushed with Golden Pineapple White Balsamic and grilled until caramelized and lightly charred, doubling down on its own natural sweetness. Then it's topped with a cloud of whipped cream flavored with Coconut White Balsamic, which somehow tastes even more like a real pina colada than the balsamic on its own.

No oven, minimal cleanup, and it looks like a real dessert course instead of just cut-up fruit.

Why the Grill Matters Here

Grilling pineapple concentrates its natural sugars and adds real caramelization that raw pineapple just doesn't have. The Golden Pineapple Balsamic brushed on before and during grilling amplifies that effect, so the fruit ends up tasting like a more intense, more complex version of itself.

Grilled Pineapple with Coconut Balsamic Whipped Cream

Ingredients

  • 1 fresh pineapple, peeled, cored, and cut into rings or spears
  • 3 tbsp Golden Pineapple White Balsamic
  • 1 tbsp brown sugar (optional)
  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • 2 tbsp Coconut White Balsamic
  • Toasted coconut flakes, for garnish

Instructions

  1. Whisk the Golden Pineapple Balsamic and brown sugar together to make the glaze.
  2. Brush the pineapple rings with the glaze on both sides.
  3. Grill the pineapple 2-3 minutes per side, until caramelized and marked, brushing with more glaze as it cooks.
  4. Whip the heavy cream with the powdered sugar and Coconut White Balsamic until soft peaks form.
  5. Top the warm grilled pineapple with the coconut balsamic whipped cream.
  6. Sprinkle with toasted coconut flakes and drizzle with any remaining pineapple glaze.
Make-ahead tip: The whipped cream can be made up to a few hours ahead and kept chilled. Grill the pineapple fresh right before serving so it's still warm against the cold cream.

Make It Your Own

Skip the grill and use a hot skillet indoors if the weather doesn't cooperate. A scoop of vanilla ice cream instead of, or alongside, the whipped cream turns this into an even more decadent sundae.
