Two products carry the entire recipe: our Lemongrass Mint Balsamic Vinegar and Dill Olive Oil. Whisked together, they form a dressing that tastes like it took a lot more effort than it actually did.
English cucumbers hold up beautifully to the dressing without going soggy, and a little red onion adds just enough bite to keep every forkful interesting.
The Dressing Does All the Work
There's no cooking in this recipe at all — the entire dish is built on the strength of the dressing. That's exactly why the two products matter so much here. A weak vinegar or a flat olive oil has nowhere to hide when it's carrying the whole plate.

Lemongrass Mint & Dill Cucumbers

Ingredients
- 2 English cucumbers, sliced
- 2 tbsp Lemongrass Mint Balsamic Vinegar
- 1 tbsp Dill Olive Oil
- ½ red onion, thinly sliced
- Sea salt, to taste
Instructions
- Whisk the Lemongrass Mint Balsamic and Dill Olive Oil together in a small bowl.
- Toss the sliced cucumbers and red onion with the dressing until evenly coated.
- Season with sea salt to taste.
- Chill for 15 minutes before serving to let the flavors settle in.
Make It Your Own
Add a handful of crumbled feta for a heartier version, or toss in some cherry tomatoes for more color on the plate. If you want a little crunch, thinly sliced radishes are a great addition without changing the dressing at all.
