Olive Oils

Think of it as fresh-squeezed olive juice β€” that's really what it is! Extra virgin olive oil is the unrefined, cold-pressed juice of hand-selected olives. To earn the "extra virgin" label, it must meet strict chemical standards for purity and freshness. No heat, no chemicals, no shortcuts. Just pure, beautiful olive fruit.
Our oils travel the globe! We source from top-producing regions including Spain, Italy, Portugal, Chile, Argentina, and Australia β€” always chasing the freshest harvest. Because olives ripen in different hemispheres at different times of year, we're able to keep our shelves stocked with vibrant, recently-crushed oils year-round. Our fused and infused oils are crafted in small batches right here in the USA.
Great question! Modern production has evolved beyond traditional pressing. Our oils are extracted using state-of-the-art centrifuge technology β€” this creates an oxygen-deprived environment for faster, single-step extraction that actually preserves more freshness than old-school pressing methods. The result? Better oil. The term "first cold pressed" is more of a heritage term these days β€” what matters is freshness, low acidity, and high polyphenols, which our oils deliver in spades.
Fused oils (also called "agrumato") are made by crushing the olives and fresh ingredients β€” like lemons, blood oranges, or chilies β€” together at the same time. The flavors are deeply integrated and beautifully bold.

Infused oils start with finished olive oil and are then combined with natural extracts, herbs, or other flavorings. Both methods produce incredible flavor, just with different intensity profiles. Fused = deeper fusion; infused = brighter, more distinct flavors.

Because fused oils are made by crushing olives and fresh ingredients together, tiny particles of olive skin, fruit pulp, or herbs naturally end up in the oil. Some bottles may be clearer than others depending on when they were decanted β€” both are perfectly delicious.

Balsamic Vinegars

Real balsamic vinegar is a labor of love that starts in Italy. Sweet Trebbiano white grapes are slow-cooked in copper kettles, then aged in a series of wooden barrels β€” each a different wood (oak, cherry, mulberry) β€” for up to 18+ years using the traditional "Solera" method. As the vinegar evaporates and concentrates each year, it picks up complexity and depth from the wood. The result? That rich, sweet-tart flavor that's completely unlike anything you'll find in a grocery store.
Fun fact: both start from the same grape! The difference is all in the process.

Dark balsamic is cooked over an open wood fire until the grape must caramelizes β€” that's where the deep color and rich, complex sweetness come from. It's aged in wooden casks for up to 18 years with no added sugar or coloring.

White balsamic is cooked more gently, stopping before caramelization, and often aged in stainless steel or new wood barrels. This keeps it light-colored with a brighter, more delicate tang. Perfect when you want flavor without darkening a dish.
Here's the fun answer: it already "went bad" β€” that's the point! Balsamic is essentially a beautifully controlled fermentation, and its shelf life is essentially indefinite. Store it in a cool, dark place with the cap on and it'll outlive your kitchen renovations. If anything, it only gets better and more concentrated with time.
Night and day! Regular white wine vinegar is sharp, acidic, and one-dimensional. Our aged white balsamic is made from sweet Trebbiano grape must that's been gently cooked and aged β€” giving it a smooth, mellow acidity with natural sweetness and complexity that a standard vinegar simply can't offer. It's fruity, layered, and versatile enough to use in everything from salad dressings to cocktails to desserts.
We won't judge! Many of our customers love a small splash of balsamic in sparkling water as a shrub-style mocktail β€” it's refreshing and surprisingly delicious. It's also an amazing addition to cocktails, lemonade, and iced tea. Our white balsamics especially shine this way. Start with just a teaspoon in a glass of sparkling water and go from there!

Cooking & Pairing

Absolutely β€” and you should! The myth that you can't cook with EVOO is outdated. Fresh extra virgin olive oil has a smoke point between 350Β°F–410Β°F, which is more than sufficient for everyday sautΓ©ing, roasting, and even light frying. The key: the fresher and higher-quality the oil, the higher the smoke point. Just avoid overheating it (don't let it smoke) and you're golden.
The classic guideline is 2 parts olive oil to 1 part balsamic, but honestly β€” trust your taste buds. Our balsamics are naturally sweeter and more complex than grocery store varieties, so you may actually want to go a bit heavier on the vinegar than you're used to. Shake it all in a jar with a pinch of salt and a dab of Dijon for an emulsified dream dressing.
Yes! Our Natural Butter Fused Olive Oil is a fantastic healthy swap. The rule of thumb: use ΒΎ teaspoon of olive oil for every 1 teaspoon of butter. Storage & Shelf Life

Olive oil has two mortal enemies: heat and light. Store it in a cool, dark place β€” a pantry or cupboard away from the stove is ideal. Never leave it on a windowsill or directly next to your range. Avoid clear glass containers if possible. You don't need to refrigerate it (it'll get cloudy and thick when chilled, though that's harmless), but cool and dark is the golden rule.
Stored properly, our oils stay fresh and flavorful for 9–12 months from the crush/production date. Over time, polyphenols and antioxidants gradually diminish and the fresh flavors fade. Our best advice? Don't save it for special occasions β€” use it every day! It's too good to hoard.
Essentially forever. Balsamic vinegar is already an aged, fermented product β€” it's not going to spoil on you. Keep it sealed, at room temperature, away from direct sunlight, and it'll be just fine for years. In fact, an opened bottle of balsamic will slowly concentrate and deepen in flavor over time. Consider it a gift that keeps on giving.
Yes β€” and we love that you want to! Bottle refills are available in-store. Just bring your clean, completely dry bottle. The easiest way to clean it: run it through the dishwasher upside down, then let it air dry completely with the stopper removed. We'll relabel it for you and you can pick a totally different flavor if you like β€” no commitment required. Per state food safety laws, we can't reuse bottles for regular stock, only for in-store refills.

Most of our products come in four sizes: 60ml, 200ml, 375ml, and 750ml. The 60ml is perfect for trying something new or for gifting β€” it's a great way to sample before committing to a larger bottle. The 750ml is for the true devotees who go through it faster than you'd think possible.
We love this! Custom gift baskets, wedding favors, corporate gift sets β€” we do it all and we do it well. Our 60ml bottles are especially popular as wedding or event favors and can be labeled and packaged to match your theme. For custom orders, we recommend reaching out at least 4–6 weeks in advance.
