You'll also need:

• 1 Tbsp. olive oil
• 1 lb. mild Italian sausage
• 12 cups beef broth (96 oz.)
• 1 can (29 oz.) petite diced tomatoes
• 3 medium zucchini, diced (about 4 cups)
• Optional: 1 cup red wine

How to make it:

1. Pick through the lentils, removing any discolored lentils or foreign material. Rinse well.
2. In a 6- or 8-quart pot, heat the olive oil, then crumble and brown the sausage.
3. Stir in the vegetable & seasoning packet.
4. Stir in the broth and lentils. Bring to a boil, reduce heat, cover, and simmer 30 minutes.
5. Add the tomatoes, zucchini, and wine (if using). Return to a gentle simmer, cover, and cook 30 minutes more.
