You'll also need:

• 1-2 Tbsp. olive oil
• 1 medium onion, chopped (1 cup)
• 8 cups chicken or vegetable broth (64 oz.)
• 1 cup frozen baby or petite peas
• 1 Tbsp. lemon juice
• Optional: 2 cups cooked turkey or chicken, cut up

How to make it:

1. In a 4-quart pot, sauté the onion in oil over low heat for 5 minutes.
2. Add the vegetable soup mix and toss lightly.
3. Add the broth (and cooked chicken or turkey, if using). Bring to a boil, reduce heat, and simmer covered 15 minutes.
4. Stir in the pasta packet and simmer covered 20 minutes more.
5. Add the peas and lemon juice and simmer uncovered 2-3 minutes. If the soup gets too thick, add a cup of water or broth.
