You'll also need:

• 8 cups chicken broth (64 oz.)
• 2 cups cooked chicken breast, cut up (8-10 oz.)
• 2-3 stalks celery, sliced, or 1 bulb fennel, chopped
• 1-2 Tbsp. lemon juice

How to make it:

1. In a 3- or 4-quart pot, bring the broth to a boil.
2. Reduce heat and stir in the soup mix, chicken, and celery or fennel.
3. Return to a simmer, cover, and cook 35 minutes.
4. Stir in the lemon juice (start with 1 Tbsp. and taste). Salt and pepper to taste and serve. For a creamy version, skip the lemon and stir in 1 cup of cream.
